You’ll be greeted with a welcome prosecco served with locally produced cold cuts and cheese. Then we'll learn to prepare coffee tiramisu. It is a wonderful recipe made with Neapolitan coffee, Italian mascarpone cheese and chocolate chips We will store the dessert in the fridge while creating fresh pasta from scratch that will be mixed with fresh tomato sauce.
The next step will be the main course: meatballs or chicken "hunter style" (cacciatore) depending on your preference. This meal is enriched with local ingredients like extra virgin olive oil, onions, celery, cherry tomatoes, wine, and rosemary.
At the end, you'll enjoy your own handmade food while relaxing with a good white or red wine. There is a lot to be said for good food, wine and conversation.

When I’d sit in my grandma's kitchen, she’d make pasta while sharing memories of her mom and grandma. It was then I realized my generation was missing something important: the handmade food techniques and traditions passed down through the ages. It was from this love for food that I became the executive chef and founder of Quanto Basta, the first street front cooking school in my town. It is a faithful copy of my grandmother's kitchen, where she preserved meat and cheese for winter by hanging them from the roof's chestnut support beams, and put fresh vegetables and fruit in glass jars filled with oil, vinegar, salt or sugar.
Our conversations would go like this:
Me: "How much salt are you putting in there, grandma?"
She: "Quanto basta", that means…the quantity that's enough…

We'll be in the open chef's kitchen Quanto Basta Cooking School, a small street front restaurant in the center of town.
We had a lovely evening with Antonio in his cookery school and made some fantastic food. The food was made altogether so we didn’t get to do everything and there was a lot of watching but we did learn a lot and enjoyed ourselves enormously.
