Get to know Indonesian cuisine from a Dutch hobby-chef with Indonesian roots! We'll meet in front of cafe 'De Drie Fleschjes' behind Dam Square in the historical city centre of Amsterdam. In this special cooking workshop you will find out that Dutch cuisine can actually be very tasty, but of course only because of many Indonesian influences, which is the reason why Indonesian cuisine is an integral part of Dutch cuisine nowadays. In this 3 hour cooking workshop you will get to know the essential ingredients and flavours of Indonesian cuisine, such as kaffir lime leaf, ginger, galanga (laos), trassi, tamarind and of course the famous chili paste 'sambal' and sweet soy sauce 'ketjap manis'. After learning about the ingredients, you will learn step by step how to combine those ingredients and prepare a variety of delicious tasteful Indonesian dishes. Prepare yourself for a mouthwatering experience which will challenge your tastebuds! Please let me know what your preferences are (meat, fish, vegetarian, vegan) and I'll create a personalized menu and experience for you. If you would like, Chef David also explains about the turbulent history between the Netherlands and Indonesia in order to get a better idea of the influences both countries have had on each other and on each other's cuisine.
Being from Dutch and Indonesian descent I grew up in a food-loving family and I spent a lot of time in the kitchen watching my mother cook Indonesian dishes. Regular meetings with the Indonesian part of my family always revolved around food. However, I started to enjoy cooking much later in my life during my student time. From then on, which is about 10 years ago, I developed a great passion for Asian cooking and more particular Indonesian cuisine. I'm really passionate about the ingredients and the flavours involved in Indonesian cuisine and I would love to learn you about the mouthwatering dishes I usually make!
