Au programme

After a short introduction, we will split in teams of 2 or 3 per tempering machine and start to temper the chocolate, aka making it crystallize!

Each participant will be working with its own mold and will have to make its own chocolate shells (up to 21 per person!) then we will be cooking all together the praline filling ( milk/dark chocolate ganache - vegan & dairy free alternatives are available -) before working on mendiants. You will have the possibility to make from 5 to 15 or even 20 mendiants per person, depending on how motivated you're feeling!
Following that step, you will be piping the filling inside your own shells and covering them of nice liquid chocolate, a delish!

While we wait for the chocolate to harden, you will be invited to taste some real, good, hot chocolate and ask any question about chocolate making or the city of Brussels.

Before each step, there will be a demonstration, so you know exactly what to do and what you have to get to! I usually write down all the recipe on the table, feel free to take a picture of them for your own records.

After 2.5h you will have learned some essential chocolate making techniques, master the chocolate crystallizing process and leave the workshop with a nice golden box filled up of 35+ of your very own delicious Belgian chocolates. Whether you decide to share them or no....Enjoy!

Hi! Im Titch. I have been making delicious waffles for many years until I decided it was time to move on the Belgian food chain and I started learning about chocolates! After many years of practice, I am happy to host this technical - yet accessible to anyone 12+ years old - praline and mendiants chocolate making class.
I have had the chance to travel to many countries, especially Peru to learn more on the reality of the cocoa production and the whole chain from the plant to our workshop in Brussels, I am proud to use only the best fair trade chocolate, come share the joy!

Le lieu

The workshop takes place at my own private venue in Brussels. That's an old bar / restaurant that has been transformed to host cooking classes. We host chocolate in the morning, waffle making in the afternoon and beer tasting in the evening.

Heel fijn om creatief te kunnen zijn met heerlijke chocolade. En het resultaat was heerlijk. Een tip: als je nadien nog een dagje Brussel gepland hebt, neem je best een koeltasje mee zodat je pralines niet gesmolten zijn voor je thuis komt.

A very informative and fun way to spend the morning in Brussels. Our host was helpful and very nice- I learned a new skill and will definitely make chocolates on my own when I get home. If you want a great chocolate making experience .... book this.

Had a great time learning how to make chocolate! The host was very informative and helpful. There was a fairly large class (18 people) so you were required to share with others- and in my case strangers! If you’re going with others book together so they don’t separate you like they did for me! Not a big deal but my group was extremely messy and slightly annoying haha. You get a ton of chocolate and good knowledge for the price of the experience! Our favorite part of Brussels by far!

We had a wonderful time at the chocolate class. The host was very kind and understanding. Unfortunately, one of our friends flights was cancelled making her late to the class. The host said it was fine for her to join us late and that we could just catch her up with what we had done so far. She answered all of our questions even the one we had after the class about storage of the chocolates and how long they would last. We made a lot of chocolates and even got to make hot chocolate with the leftover. The class was fun and full of chatter and conversation as we worked though the different steps. The instructor was funny and this made the process seem less daunting then it initially seemed. We thoroughly enjoyed our experience making chocolates.

Great service had a lot of fun and everything was provided. Loved making my own chocolates. Only issue is that there is a lot of standing around and doing nothing for parts of the day as you work in groups, this is fine but i would have preferred somewhere to sit during this period of inactivity.
