Au programme

A pizza making experience like no other out in the beautiful Texas hill country with a wood fired oven hand built by me and my father. Throughout the course of your evening on our farm Chef/Owner Ryan Hildebrand will walk you through the history of pizza and woodfired baking as well as break down each component of a true Neapolitan style pie. Guests will get a chance to interact with every part of the pizza making process as I explain the “whys” behind this classic dish. At 6 the guests will arrive to a welcome beverage and a brief introduction to the history of our farm and of woodfired baking followed by a tasting and explanation of classic sauce and cheese techniques. After this we will move to shaping our own individual pies and begin assembling pizzas for baking. Following the bake we will dine al fresco on our traditional and from scratch artisan made pies.

I’ve been in the essential business of bringing people together through food for over 10 years. I worked for myriad of incredibly talented chefs while also operating my own kitchens. My family heritage is German and the German baking culture is rich and well rooted in European baking lore. I have travelled to over thirty countries and love trying to recreate authentic and traditional recipes directly from the source. My fiancé and I have spent a lot of time in Italy and fell in love with Neapolitan style pizza the moment we first laid eyes on its charred crust. My father and I built a Pompeii style pizza oven ourselves over the past year here at the farm and I can’t wait to show you how it works.
