When i was around 30 years old had gotten serious disease that caused me to go to bathroom over 30 times every day!!
The disease was specified by the Japanese government as serious sickness
So I had start to cook to overcome the disease through improving dietary habits.
At first I mainly cook meat dishes.
However I start to cook fish dishes to be more healthier.

Simmered fish is the best way to eat delicious fish dish at home. You’ll learn how to remove the fish smell and how to season a fish using Japanese traditional cooking skills and by adding condiments. We’ll experience various tastes of simmered fish seasoned different ways. We’ll cook a rice dish, miso soup, and a Japanese-style dessert, and eat them all at lunchtime.

I was born in the Oita Prefecture and went to university in China, where I realized my dream of working for foreigners at a trading company, as a teacher, and as an English and Chinese translator. I began to cook fish dishes, especially simmered fish. At first I didn’t like fish, but grew to love it and now run a Japanese simmered fish cooking class hoping that everyone will enjoy this dish.

This cooking class is really great for learning more about traditional and authentic Japanese cuisine, apart from Sushi and Ramen. You will cook a whole meal consisting of several courses including dessert, and everything is really tasty! And Shin is a very nice host too.

Conclusion first: anyone interested in learning to prepare healthy home Japanese food, take this class. It's worth every minute and every penny. This cooking class was exactly what I wanted - a heart-felt, warm, hearty yet healthy home cooking! I am allergic to dairy products and the very first message Shin san sent me when I signed up for this class was to ask whether I had any food sensivities or allergies. I've taken cooking classes from various places before and usually I am the one who has to actively inform them about my allergies. Shin san took the initiative to ask me first, which to me meant a lot. Anyone with food sensitivities/ allergies would know what I mean. Prior to this class, I was afraid to try and make Japanese meals because such task seemed complicated. However, Shin san taught me how to make a healthy Japanese home meal (rice steamed with veggies and fish, miso soup, boiled fish (no fishy stink!), spinach side dish, and matcha soy milk pudding) and he made it so simple and hassle-free that I am confident I can recreate this meal myself. You feel good making something clean and nurishing and they taste absolutely fabulous! And Shin san provides you with a beautiful handout that explains thoroughly how to make them all. This was by far the best cooking class I have taken. I recommend this class to everyone!

I took a side trip to Tokyo just to take Shinsan's class and it was totally worth it! The class was a unique, fun and memorable experience. Shinsan was patient and a wonderful teacher. The class was well organized; the meals balanced, healthy and well thought of. The best part is that since the class I have changed my diet and eating habits, and now enjoying the healthier options I've learned from his class. I will be back soon for more classes and I will be taking my family with me. Arigato gozaimasu Shinsan! Mata ne!

Thanks shin san for teaching me today. The simmered fish experience is unique, I learned how to get rid of the fishy smell and the dishes are delicious

非常有趣的一次体验,平时很少在家做饭,但是很喜欢吃日本料理。Shin很有耐心,还准备了食谱可以带回去学着做,日本的食材现在网上也可以很方便的买到。自己做出来的果然是别有一番滋味呢!
