I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. I’ll tell you all the secrets for the italian handmade pasta and some tipa to replicate easy at home. Other things to note: We don't have a gluten free option, sorry. What shall we do.. We start by me coming to pick you up anywhere you are. Then we go to visit the most beautiful squares in the world, churches, monuments and hills eg, Piazza Venezia, Piazza di Spagna, Piazza Navona, Pantheon, Campo di fiori Trastevere Fontana di Trevi, via del corso via condotti, via del anima, via del governo vecchio, piazza del Figo, circo massimo, il buco della serratura, San pietro Vatican, Gianicolo, Pincio. Then we stop to have the best coffee in Rome in a very popular bar and then the famous Italian ice cream. We drive through the romantic alleys where many shops are located , in the air we can smell the inviting aroma coming out the restaurants that serve typical Roman dishes. At each place, we will get pictures taken by the staff or from me. Each stop will be 10-15 minutes and the guests are free to visit the locations alone if they wish so.. At the end, I will leave the guest at the location of their choosing.

We will discover the art of cooking Roman Pizza and we will have a Wine Tour in a unique context, my family' 17th century wine farmhouse, immersed in Frascati's vineyards (only 24 minutes train ride from Rome!). Here at the farmhouse, breads and pizzas used to be cooked for local farmers and lots of wines were produced. Today my family cultivates a family-run vineyard, to produce boutique wines and extra virgin olive oil, and serve local specialties in the tasting room. We will meet in Frascati station and we will then accompany you to my family farmhouse to discover panoramic scenarios and visiting the old cellar with a guided Wine tour of the vineyard and old cellar! We will meet our experienced Pizza Maestro, to make you discover the art of cooking the roman Pizza from scratch, The class will happen either at the farmhouse or at the former family tavern in town after the wine tasting experience. We will cook the Pizza by using various traditional toppings! And you will learn the best tips to prepare your own pizza at home. We will also provide you with our detailed Maestro's pizza recipe! We will finally enjoy a nice lunch with wines and musical surprise!

Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Depending on the period we will go to different types of woods and the meeting point may change. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. During lunch we will have the opportunity to get to know each other better, drinking good wine and eating fresh seasonal truffles. Other things to remember. Long, comfortable trousers are required (ankles must be covered). I also suggest wearing a pair of boots. If you don't have them, sneakers are fine too.

You will be cooking with one of the best international chefs. I will show you how to prepare the perfect pasta—no machines, just your hands, the freshest local ingredients, and your fantasy. You’ll be part of a day workshop and then join us in tasting what you have just cooked. I will teach you how to make many types of homemade pasta in a pasta laboratory We will start our workshop making handmade pasta with different kind of flour. We will make thin sheets dough, sometimes colored in green with spinach, red with tomato, or black with squid ink. You will be guided into a careful explanation of safe food cutting procedures, realization of different types of ravioli, both in shape and filling; fettuccine; tonnarelli, and tagliolini. All dressed with local Roman sauces such as Carbonara, Cacio e Pepe, Amatriciana or Gricia sauce. We will cook all pasta and prepare all the sauces made during the class, accompanied by good Italian wine. Moreover, you will be awarded of a class participation diploma. Together we will discover the Prosecco Hills... beautiful places of my childhood, where I used to run freely around the vineyards! In the morning, with me and my husband, we will visit a winery located in an area with a beautiful scenery, where we will learn all the secrets of Prosecco wine making and taste some glasses of this famous sparkling wine! We will then visit a local Osteria lost in the middle of the hills, and will have an aperitivo in front of the vineyards, while listening to the delightful singing of the birds! We will meet my family, while enjoying a typical lunch in our family owned osteria, where traditional dishes are prepared using our grandma's recipes, and where the typical "spiedo" meat cooks slowly near the fire! All desserts are home made by my brother and are really a sweet end of a delicious 4 courses meal! We will visit a second winery, where we will meet friends that run a very high quality DOCG Prosecco winery and produce wines using ancient types of vines and lots of passion! Finally, in summer time only (Apr to Oct), there could be the possibility of enjoying a unique picnic experience in a stunning area in the middle of the vineyards.

Come along for an after-dark stroll to explore some of these tales of Rome. We begin in one of Rome's liveliest squares, now full of bars and restaurants. However, it was once a place of execution, and reminders of this still stand - hear the tale of Giordano Bruno, one of Italy's greatest minds who got on the wrong side of the Church. Then we stroll through the backstreets, arriving at one of the oldest bridges, which is haunted by one of Rome's most infamous characters. Strolling down a medieval street, we come to a unique church, home to a mysterious order of monks with a rather macabre task. From here, we reach the site of one of the world's most notorious historical prisons, then pass the tomb of the notorious Borgia Pope, before arriving at the home of an infamous poisoner. Soon, we reach Castel Sant'Angelo, where we talk about one of Rome's most famous executions, which the city's people didn't want - the Cenci family. Altogether, it's a fascinating alternative look at Roman history. Other things to note: It's an easy walk, lasting about 2 hours. We end close to some nice bars and restaurants. Immerse yourself in the Tuscan countryside with 3 different experiences! We will meet in Florence, an authorized driver will take you to our farm in just 35 minutes. What will we do? 1 - Walk among country fields, ancient olive trees and vineyards, enjoy the landscape, the plants, the explanation of our history, an occasion to take photos in the suggestive setting.
Maybe you will meet our funny domesticated pig! In September taste the grapes! 2 - Visit the cellar and taste 5 organic Tuscan wines: white & red, aged directly from the barrel, and "vin santo" a traditional sweet wine. Then you can taste olive oil, we will delight you with a short film about our mission. You have the opportunity to buy wines at cellar prices, or order them to ship. 3 The last part is dedicated to making fresh pasta, with Raffaella or Laura, they teach the secrets to make pasta like Spaghetti or Ravioli! The pasta will be mixed and cooked together with that of the others, it will not be possible to do individual cooking. Of course, we will eat them together at a long table as in an Italian family.
