There's a reason that copy-cat Cafe Rio recipes can be found all over the internet. If you haven't tried their sweet pork salads, you should.

Like Cafe Rio, this place makes your salads, burritos, and/or tacos right in front of you as you walk down the line. Unlike Cafe Rio, Costa Vida has half-salads, which makes for a more manageable meal, if you don't want leftovers.

The best cupcake I ever ate came from this place. You can make a meal out of these things, so go hungry. A bit of a drive from the Airbnb, but not bad.

Hawaii holds a piece of my heart. I lived there for a semester of college and have taken several trips there with my husband and family, too. Whenever I get a longing to go back that can't be fulfilled by jumping on a plane, I go to Mo' Bettahs. The food is authentically and deliciously Hawaiian, and the atmosphere is as close as you can get to an island-feel in land-locked Utah. It takes about fifteen minutes to drive to the Thanksgiving Point area from the apartment, but if you're craving Hawaii, too, that's much more doable than a six-hour plane ride.

We like to pull into a campsite and roast marshmallows and hot dogs. We like to hike here. We like to drive through the canyon in the fall. We like to do just about anything here because the air is fresh and clean and the views amazing.

The hike to the cave is a bit stiff but well worth the strain. Make reservations ahead of time.

This aquarium in the desert has penguins and river otters and sea jellies, to name a few of the delightful creatures to watch. It's about a 25 minute drive from the apartment and is easily accessible from the freeway. Just look for the alien-spaceship-looking contraption outside the building. You can't miss it.

It's about a 25 minute drive from the apartment and is easily accessible from the freeway. Just look for the alien-spaceship-looking contraption outside the building. You can't miss it.
One of the most beautiful college campuses you'll find. Also, the fudge, mint brownies, and ice cream are amazing. It takes about 35-45 minutes to drive there from the apartment. While in Provo, check out the local food and music scene.

We have floated down the Provo River, hiked some of the numerous trails here, ridden the Heber Creeper, taken drives to see the fall leaves, watched an outdoor play at Sundance, and gone tubing at Soldier Hollow. We have yet to try the zipline tour, which is on our list of things to do. You might want to put it on yours, too.

Sleep in a bit and avoid rush hour.

Saratoga Springs is a bedroom community with lots of commuters, and so the roads tend to be busy during rush hour. After nine, the traffic lightens up and getting around the city is easy.

Or, wake up early and see the sunrise.

The sunrises over Utah Lake can be spectacular. Just step out onto the sidewalk to see what I mean or drive down to the lake and see if you can spot pelicans and other waterfowl basking in the dawn's early light.
Coutumes et culture

We don't drink, but we do . . . eat cookies

If you're new to Utah, you'll soon realize there aren't many drinking establishments. If you're looking for bars, you can find them, but not in Saratoga Springs. You will, however, find gourmet soda shops that also sell cookies as big as your hand (search for Swig, Sodalicious or Fiiz on your GPS). And if cookies as big as your hand are your thing, you can find shops that sell only those, such as Chip, Crumbl and Smart Cookie. There is a Crumbl in Saratoga Springs, a Chip and a Smart Cookie in American Fork. You can't go wrong with any of them. I know, because I do eat cookies.

Take a Hike

Download the Alltrails app and spend some of your time in Utah exploring one or more of the many trails you can find on it. Some of our favorites in this area are Gloria Falls, Horsetail Falls, First Falls, Stewart Falls and Bells Canyon. We also enjoyed a recent walk around Silverlake, near Brighton, a mellow, nature hike that young children can easily manage. The options are nearly endless and alltrails can help you find one with the length and degree of difficulty that you desire.
