Paul Flynn, chef and owner of The Tannery Restaurant, Townhouse and Cookery School, Dungarvan, Co. Waterford is renowned for cooking modern Irish food. He started his cooking career with Nico Ladenis in London in the late 80s and returned to Ireland in 1993. Paul’s dishes are known and loved for their deep earthy flavours and the menus give nothing away in their simplicity yet the tastes are hugely exciting. He was the cookery writer for the Irish Times and subsequently wrote three cookery books, An Irish Adventure with Food (Food and Wine cookbook of the year 2005) and ‘Second Helpings’ which contains a selection of spectacular recipes using seasonal food. His third book, Surf and Turf is co-written with Martin Shanahan was released in 2012. Most recently Paul has written a book in collaboration with Lidl Ireland.

The building is steeped in maritime history, and as well as the beautiful harbour views to the front, the outdoor courtyard bar is bordered by the ancient castle walls of the 12th Century King John's Castle.

Lovely views of Comeragh Mountains and hidden within is Mahon falls. Just a short 20 min flat walk in with steep incline at falls. The views are spectacular and for the adventurous climb the falls to capture the best of views

The Loop Walk is a moderate 3-4 hour (7.5 km) walking route around a natural amphitheatre of splendour and silence, the Coumshingaun Corrie Lake and the surrounding mountains in County Waterford, Ireland. Coumshingaun is one of the finest examples of a corrie or coum in Europe and the Comeragh mountains most famous landmark. Corries were formed by glacier movement during the ice age.

The Loop Walk is a moderate 3-4 hour (7.5 km) walking route around a natural amphitheatre of splendour and silence, the Coumshingaun Corrie Lake and the surrounding mountains in County Waterford, Ireland. Coumshingaun is one of the finest examples of a corrie or coum in Europe and the Comeragh mountains most famous landmark. Corries were formed by glacier movement during the ice age.

The Waterford Greenway is a spectacular 46km off-road cycling and walking trail along an old railway line between Dungarvan and Waterford. Perfect for family breaks in Waterford, enjoy a beautiful journey across three tall viaducts from the river to the sea. You can walk, cycle or run the Greenway what ever way you want. Bike hire and tours are available with lots of options to choose from. From Dungarvan it's a 25min cycle to Scartore, passing by beautiful beaches such as Clonea Strand. Continuing from Scartore, a 35min cycle will allow one to view some of the nicest scenery on the entire Greenway: The Ballyvoyle Tunnel and The Ballyvoyle Viaduct. Each providing it's own unique setting it's one of a kind in Ireland and something one would be sure never to forget! Arriving at Kilmacthomas you are now roughly halfway! Set off from here over the viaduct through beautiful valleys with spectacular views of the Comeragh mountains to the north. Cross over Durrow Viaduct and past ivy-covered Durrow Station where ruins of the old railway platform and waiting rooms still stand. (Est Cycle - 1hr 20min) Enjoy tranquil silence then as you move through lush and dense Waterford countryside, moving ever closer to the end of The Greenway at Waterford City. (Est Cycle - 1hr 20min) The final section of the Greenway offers some beatiful snippets of Irish culture as you pass the beautiful Mount Congreve, see medieval ruins of a Norman Castle, and go through woodlands before arriving at the Waterford Suir Valley heritage train. From here then it's on towards Waterford City and the end of your Greenway Adventure. (Est Cycle - 1hr)
