Arthur's Seat is an extinct volcano, from the top of which, you command incredible views across the whole city and beyond to Fife and the Borders. For sunrise or sunset especially, it's well worth the climb.

The Botanic gardens are a lovely way to spend a few hours of an afternoon. Rain or shine, its a beautiful walk and only 5 minutes from my flat.
